Friday night we stayed with friends in Lake Forest Park and I brought one of my two bottles of 2006 Cayuse Syrah from the Armada Vineyard. I opened the bottle around 5pm and we drank it 2 1/2 to 3 hours later. Letting it breathe a bit really does help. I’ve read in some wine forums about the Cayuse funk when opening their bottles, but it smelled pretty damn good to me. And, after leaving it open and decanting it, we enjoyed it with one of my favorite pies from Pagliacci, the fig and prosciutto, a pagliaccio salad (no red peppers) and Gelatiamo blackberry sorbet. All a treat. Good friends, good food, good times.
